Heather Fed Lamb
We use a mixture of breeds including Dalesbred, Swaledale and Herdwick. These breeds are much more flavoursome than your normal commercial lowland breeds as they spend the majority of their lives high in the fells feeding on grass, heather and gorse. To ensure tenderness we allow the meat to mature for 14 days before cutting. Finally our skilled butcher team trim and portion each cut to perfection.
