Our sausage meat uses the same Albert Matthews 70 years old seasoning recipe used in our award winning sausage. With hints of rosemary, thyme and mace and a slight peppery back note it's perfect for using in classic dishes such sage and onion stuffing. It also works well rolled into meat balls and served with pasta or gnocchi.
