Most people agree the shoulder has more flavour than the leg and if cooked correctly i.e. a bit slower the results are stunning. Like the rest of our Heather Fed range the lambs come from the Forest of Bowland a designated area of outstanding natural beauty in North Lancashire. The lambs roam freely as hefted flocks high up on the fells grazing on the heather and gorse which gives the meat such great flavour. The shoulder comes trimmed and prepared ready to go straight in the oven.
